Cauliflower Rice Deserves a Spot on Your Plate

Cauliflower rice is truly one of nature’s multitaskers: low in carbs, high in fibre, rich in vitamins and antioxidants, and kind on your blood sugar. Swapping rice for riced cauliflower transforms a high-GI side into something nutrient dense and stabilising.

Cauliflower Rice

When comparing cauliflower rice to traditional white rice, the calorie and carbohydrate difference is significant. Scientific nutrition data consistently show that plain cauliflower rice contains around 25–40 calories (approximately 105–167 kJ) per 100 grams, while cooked white rice provides between 130–200 calories (approximately 544–837 kJ)for the same amount.

This means that by swapping white rice for cauliflower rice, you can enjoy a similar volume of food for a fraction of the calories and carbohydrates: about 7 grams of carbs per half cup of cauliflower rice versus around 22 grams in white rice. These values are supported by reputable sources such as Healthline, Verywell Fit, and EatingWell.

When we approach food trauma or the “fear of missing out,” cauliflower rice is a powerful tool: it fills your plate, gives bulk and satisfaction, but without triggering blood sugar roller coasters or cravings. In this version, I’ve added a few flavour boosts to make it feel fresh and mine.

My Version of Cauliflower Rice

Ingredients (serves 4)

  • 1 medium to large cauliflower
  • 1 tbsp extra virgin olive oil (or avocado oil)
  • 1 small red onion, finely diced
  • 2–3 garlic cloves, minced
  • ½ tsp ground cumin
  • ¼ tsp smoked paprika (optional)
  • Salt + pepper to taste
  • Juice of ½ lemon (or lime)
  • Handful fresh coriander (cilantro) or parsley, chopped
  • Optional: toasted almond slivers (for crunch)

Method

  1. Rice the cauliflower
Trim off the leaves and core. Break into florets or smaller chunks. Using a food processor, pulse until the texture resembles rice or coarse couscous. (If you don’t have a processor, a box grater works fine.)
  2. Dry it before cooking
Spread the riced cauliflower on a clean tea towel or kitchen cloth, fold it over, and press or squeeze to remove any stray moisture. This helps prevent sogginess while cooking.
  3. Sauté the aromatics
Heat your oil in a wide skillet over medium heat. Add the onion and cook until soft and translucent (3–4 minutes). Add garlic and sauté briefly until fragrant (30 seconds to 1 minute).
  4. Add spices & cauliflower
Stir in cumin, smoked paprika, salt and pepper. Add the cauliflower rice in an even layer. Let it sit without stirring for 1 minute so the bottom browns slightly. Then toss or stir and continue cooking another 3–5 minutes, until tender but not mushy.
  5. Finish with brightness and texture
Remove from heat. Stir in lemon (or lime) juice, fresh herbs, and almond slivers if using. Adjust seasoning.
  6. Serve warm
Use as a side, a base under a curry or stir-fry, or even as a vehicle for protein and greens. A perfect combo could be this Keto Peanut Butter Chicken

Health Notes & Why This Version Works

  • Low glycemic impact: Because cauliflower is non-starchy and high in fibre, it doesn’t spike blood sugar the way white rice does.
  • Volume + satiety for fewer calories: You get the “plate fullness” your brain often expects from grains — but with a fraction of the energy load.
  • Antioxidants & detox support: Cauliflower belongs to the cruciferous family (like broccoli, kale). It contains compounds like sulforaphane which promote healthy liver function and cellular detoxification.
  • Blood sugar balance: With slower digestion and less glycemic load, you reduce the chances of a “crash → cravings” cycle.

Tips for Success

  • Use a wide pan so moisture evaporates quickly — don’t overcrowd.
  • Make sure your cauliflower is very dry before cooking.
  • Let it rest occasionally in the pan so some parts get golden (adds texture).
  • Vary your add-ins each time: turmeric + peas, za’atar + sumac, fresh mint + cucumber: variety feels indugent.
  • Prepare in bulk: store cooked cauliflower rice in airtight containers in the fridge for up to 3–4 days. Reheat in a hot dry pan or microwave, stirring gently.
  • If you have not prepared for your meal you could always buy Woolworths South Africa Already Prepared or Tesco’s UK Already Prepared Cauliflower Rice

In conclusion: This simple cauliflower rice is more than just a low-carb trick — it’s a statement of listening to your body. It gives structure (the “rice” vehicle), but leaves room for personalisation and nourishment. When we move away from food rules and into the mindset of what feels good, recipes like this become powerful allies.
