Low-Carb, High-Protein Keto Cheesecake

Low Carb High Protein Keto Cheesecake

If you love dessert but want to stick to your health goals, this low-carb, high-protein keto cheesecake will be your new best friend. It’s creamy, satisfying, and packed with nutrients — thanks to wholesome ingredients like eggs and cottage cheese. This recipe is not only a treat for your taste buds but also a great choice for supporting blood sugar balance, muscle repair, and overall metabolic health.

Why This Cheesecake is a Nutritional Win

Eggs – the ultimate nutrient powerhouse
Eggs are one of nature’s most perfect foods. They’re packed with high-quality protein, healthy fats, and an impressive range of vitamins and minerals — including B vitamins for energy, vitamin D for bone health, and choline for brain function. The protein in eggs helps you feel fuller for longer, reducing the urge to snack on less healthy options. They also contain antioxidants like lutein and zeaxanthin, which support eye health.

Cottage cheese – creamy, and protein-rich
Cottage cheese is often underrated, but it’s a fantastic source of protein — particularly casein, which is slow-digesting and keeps you fuller for longer. It’s also rich in calcium for bone strength, selenium for immune support, and B12 for healthy nerve function. The creamy texture makes it perfect for a cheesecake filling without the heavy carbs and sugar of traditional recipes.

Low-Carb, High-Protein Keto Cheesecake Recipe

Servings: 8 slices
Prep time: 10 minutes
Cook time: 45 minutes
Chill time: 2–4 hours

Ingredients:

For the crust: Crust is OPTIONAL.

  • 1 cup almond flour
  • 3 tbsp melted butter
  • 1 tbsp erythritol (or preferred keto sweetener – Stevia)
  • ½ tsp cinnamon or a tablespoon of cocoa powder for variation (optional)

For the filling:

  • 500g of medium fat cottage cheese (can use low fat or full fat but not fat free)
  • 2 eggs
  • ½ cup erythritol (or preferred keto sweetener like Stevia). Best to taste test for your desired sweetness.
  • 1 tsp vanilla extract
  • ½ tsp lemon zest (optional)

Instructions:

  1. Preheat the oven to 140 °C or 302 °F
  2. Make the crust: In a bowl, combine almond flour, melted butter, sweetener, and cinnamon/cocoa. Press the mixture evenly into the bottom of a greased 20cm (8-inch) pan/pie dish.
  3. Prepare the filling: Add cottage cheese, eggs, sweetener, vanilla to a blender or food processor. Blend until completely smooth and creamy.
  4. Assemble: Pour the filling over the crust, spreading evenly.
  5. Bake: Place the cheesecake in the oven and bake for 60 minutes, or until the edges are set but the centre still has a slight jiggle. Slow and Low.
  6. Cool and chill: Let the cheesecake cool completely at room temperature, then refrigerate for at least 2–4 hours (overnight for best results).
  7. Grate the Lemon rind on the top or top with fresh berries or drizzle with 90% melted Lindt chocolate.
  8. Serve: Slice and enjoy by eating slowly and being aware of every taste sensation and texture.

Tips for Success:

  • If you prefer a creamier texture, swap half the cottage cheese for full-fat cream cheese.
  • Add a pinch of salt to enhance the flavour.
  • For extra protein, you can mix a scoop of unflavoured or vanilla whey protein powder into the filling.
  • You could also add a tablespoon of collagen powder to up the benefits.

Monday Health Coaching recipe tips

  • Avoid over baking the cheesecake, as it continues to cook as it cools. Slow and low is best.
  • Cooling your cheesecake in the still-warm oven helps it firm up even better than when left at room temperature. Be sure to keep the oven door slightly open.
  • Do not put the cheesecake in the fridge until it has cooled completely.
  • East slowly and enjoy ever mouthful with appreciation.
  • You can refrigerate if covered for up to a week. See if you can practice portion control and remember sharing is caring.
